We take pride in making from scratch cajun favorites, passed down family recipes including- marinades used for meat injections, all sauces/condiments, side dishes and chef's personal bended seasonings and rubs. Our famous sweet-heat bbq sauce and rubs used on all meats.
Our mac and cheese, famous hushpuppies and boudin are all fan favorites made from scratch daily, along with-
Red beans and rice are made using dry beans and fresh herbs and vegetables.
Crawfish etouffee is reduced down with holy trinity in a buttery roux.
Andouille is housemade from curing, grinding and stuffing into casings then slow smoked with pecan wood to perfection.
Smoked pulled pork is injected with our specail housemade marinade and personal dry rub applied, then slowed smoked in pecan wood to deliver the perfect balance of smoke flavors and tender juiciness.
Gumbo starts off first by slowly stirring to get our dark roux. Using Louisiana blue crab and shrimp, chicken or our fresh housemade smoked andouille sausage makes this dish as authentic as it gets!
Po'boys are made with fresh local shrimp, seasoned with our cajun dust, pulled pork or roast beef debris. Dressed and topped with aioli, remoulade or garlicky, spicy beef gravy.
Growing up in the New Orleans area and spending the other half in Mississippi enjoying all the fresh seafood and Cajun/Southern classics.
My business evolved when moving across country to Las Vegas Nevada and finding it hard to come across that slow and low smoke flavor and downhome sides I was searching and missing. After awhile my wife and I decided to start out on our own creating that perfect smoke flavor with the right combination of rub and spices.Creating made in house sauces such as, our aioli, remoulade,bbq and cocktail sauce.
From there the wheels started rolling as listed above we put our heart, sweat and taste buds to the test to perfect our craft in true southern bbq, smoke flavors with downhome cajun bowls and Po'boys. We take pride knowing our food is fresh from scratch, with love from family recipes and secrets passed down generations.
We are now pleased to say we are back in the south and ready to roll! After spending 5 years in Las Vegas Nevada and sharing our food in the big city.
It was time to come back down south.
